What's the best mode for fishing shots?

After 30 years of Nikon and Mamyia film cameras, I've taken the DSLR plunge with a Canon T4i. I haven't experimented enough with it, but what program mode and ISO do you all use the most for normally lit fishing shots? Any other tips greatly appreciated.

Aperture priority, but Canon calls it something else, set for around f8 in bright stuff and lower as it fades so you can get max shutter speed. 400 ISO is good until it starts waning at the end of the day and you can roll to 1600 as the contrast drops without losing too much quality.
